We are waiting for ME notice, I put mail address in Toronto, but my parents live in China. Do you think I should change mail address to China and they can get ME mail faster and take the ME?

Yes, I think so, if the Chinese mail address is reliable, and your parents plan to take ME in China. But either way doesn't make big difference (maybe 10-20 days), the main timeline is controled by CIC in Beijing.

Thanks. One more question, anyone knows the ME mail by express or regular mail? They will take ME in China for sure, just worry if they understand the requirement once they get the mail directly.

Sorry, I don't know (I haven't get ME form yet). Someone here may know the answer. If the form is in English, just ask you parents to take a picture and send email to you, and then you can explain.
