chili for beginners

1 cup canned diced tomatoes, with juice 250 ml
1/2 cup rinsed and drained canned 125 ml
red kidney beans
1/4 cup diced green bell pepper 50 ml
1/4 cup frozen corn 50 ml

1. In a large skillet, brown beef over medium-high heat, breaking up any large pieces, until no longer pink, about 7 minutes. Drain off fat and return beef to skillet.
2. Add tomatoes with juice, kidney beans, green pepper and corn. Cover, reduce heat and simmer for 15 minutes, until vegetables are very tender. Let cool.
3. Transfer to blender and puree on high speed to desired consistency.

FOR OLDER KIDS
Spoon into a hollowed-out whole wheat dinner roll and sprinkle with shredded cheese. Bake in preheated 350oF (180oC) oven until cheese is melted, about 5 minutes.

Spoon 1/2 cup (125 ml) chili onto a split baked sweet potato and sprinkle with shredded Cheddar cheese. Bake in preheated 350oF (180oC) oven until cheese is melted and potato is warmed through, about 15 minutes. Top with sour cream and sliced green onions.更多精彩文章及讨论,请光临枫下论坛 rolia.net
